•     250 g spelt

  •     celery, carrot, onion, salt, pepper

Preparation: Fry the finely chopped celery, carrot and onion, the meat. Season each layer of potato with some salt and pepper. Add the tomato and cook for 15 minutes. Put the spelt in cold water and bring to the boil for 10 minutes. After draining, add to the sauce and cook for 20 minutes, adding the broth if necessary.


  • 400 g grass pea
  • Suatoni Oil Mill EVOO
  • salt, sage, garlic and pepper
  • 80 g diced tomatoes
Preparation: Put the grass peas in water for about 12 hours. Boil with two cloves of garlic for at least 30 minutes. Fry the sage and pancetta with oil, salt and pepper. Once the sauté is ready, add the drained grass peas and brown them, adding the diced tomato, salt, pepper and chilli to taste.



  • 25 g pearl barley
  • Suatoni Oil Mill EVOO
  •  onion, parsley, grated cheese
  • 50 g pancetta
  • Meat broth
Preparation: Fry the chopped pancetta with the onion and oil, adding salt and pepper. As soon as the onion begins to brown, add the barley, the boiling broth and cook for 20 minutes. Remove from the heat, let it stand for a few minutes. Add the chopped parsley and cheese.



  • 400 g lentils
  • 60 g Suatoni Oil Mill EVOO
  • 2 onions, 1-2 stalks of celery, 2 carrots, parsley, salt and pepper
  • 100 g of pancetta
Preparation: Put the lentils in a pot with cold water. Bring to a boil and boil them. Fry the onion, carrots and celery in EVOO. Add the diced pancetta and cook it. Add a handful of chopped parsley, salt and pepper. Cook over a low heat. If necessary, add water and broth, cooking time 20/30 minutes.
