The Suatoni Family owns both the commercial farm and the "Il Frantoio" oil mill, which are located 1 km far from the historical centre of Amelia. The farm consists of 1,000 olive trees, including 800 trees planted after the terrible winter of 1985.

Suatoni
Ingredients:

400 grames of lentils, 2 onions, 1-2 sticks of celery, 100 grames of pork underbelly, 2 carots, 60 grames of extra-virgil olive oil, parsley, salt, pepper (stock).

Preparation:

Mettere le lenticchie in una pentola con acqua fredda, portare ad ebollizione e lessare le lenticchie.
Soffriggere la cipolla, le carote ed il sedano in olio extravergine di oliva.
Aggiungere la pancetta tagliata a dadini e farla cuocere.
Aggiungere una manciata di prezzemolo tritato, sale e pepe. Cucinare a fuoco lento.
Se necessario aggiungere acqua e brodo.
Tempo di cottura 20/30 minuti.
