Ingredients:

400 gm. of chicklings, extra-virgin oil of olive, salt,

80 gm. about of tomato, sage, garlic and pepper.

 

Preparation:

Put the chicklings in water for about 12 hours, bring them to the boil later with two garlic cloves for at least

30 minutes.

Brown the sage and the bacon with oil, salt and

pepper. As soon as chopped and sautéed vegetables will be ready, insert the drained chicklings and have them browned adding the small cube tomato, salt and pepper as you wish.

Add red pepper if you want.
